Preheat your oven to 350°F (175°C). Lightly grease a loaf pan or line it with parchment paper.
In a large mixing bowl, combine the ground beef, ground pork, chopped onion, milk, breadcrumbs, egg, Worcestershire sauce, salt, pepper, garlic powder, and parsley. Mix until everything is well combined, but don’t overmix to avoid tough meatloaf.
2. Shape the Meatloaf:
Transfer the meat mixture to the prepared loaf pan and shape it into a loaf. If you prefer a crustier exterior, you can form the loaf by hand and place it on a baking sheet.
3. Make the Glaze:
In a small bowl, whisk together the ketchup, brown sugar, Dijon mustard, and apple cider vinegar until smooth and combined.
4. Glaze the Meatloaf:
Spread half of the glaze evenly over the top of the meatloaf.
5. Bake:
Place the meatloaf in the preheated oven and bake for 1 hour, or until the internal temperature reaches 160°F (71°C). About halfway through baking, you can add the remaining glaze to the top of the meatloaf if you like a thicker coating of glaze.
6. Serve:
Let the meatloaf rest for 5 minutes before slicing to allow the juices to redistribute. Serve with mashed potatoes, green beans, or any other side dish you enjoy!
